Have you ever looked at "How to keep your volkswagon alive" by John Muir?? Has a step by step engine rebuild. Haven't don it myself but have friends who have from the book.

muirs book is good for getting the beginner started
but once you get a enough knowledge to handle the normal service tasks chuck it on the fire and get a good workshop manual

Go to your local library and look under 629 in the shelves. There will be VW workshop manuals for you to borrow - for free if you have a library card. Scientific/Gregory's, Haynes, Clymer, Bentley, InterEurope, they are all good.

Club Veedub Sydney has all of these in the club library for free lending to members, but you need to be a Sydney-based current financial member.
