Have you ever looked at "How to keep your volkswagon alive" by John Muir?? Has a step by step engine rebuild. Haven't don it myself but have friends who have from the book.

Go to your local library and look under 629 in the shelves. There will be VW workshop manuals for you to borrow - for free if you have a library card.
Scientific/Gregory's, Haynes, Clymer, Bentley, InterEurope, they are all good.
Club Veedub Sydney has all of these in the club library for free lending to members, but you need to be a Sydney-based current financial member.
