I am only new to this and am wondering why the engine cover on some beetles i have seen seems to still away from the body at the top under the back

They most likely use a deck lid stand off kit.

Hi Pete
I use a bracket that can open the top of the engine lid about 50mm. I use it in the summer months with temperatures of 30-40 degrees. It can be
attached or detached in a few minutes. It drops the oil temperature 10-20 degrees in the summer months which is a good thing. The alloy standoffs are
OK if You are going to leave them on all the time as it is very difficult to get the engine lid back to its correct position when you take them
off..
