I'm just wondering how hard it is to remove the existing window and then install a new sliding window in my kombi?

One for the experts, or something an amateur could attempt?

Anyone with some tips / instructions?

For the inexperienced and seeing you need a different rubber for the sliding window to the stock glass + 1/4 vent anyway, it's best to cut the edge of the rubber on the inside that sits over body work. This makes it easy to push the glass out (with a helper on the outside to catch it).
Just watch, the 1/4 vents have little tabs, and actually need to slide back ~1" so the tabs come out throught the cut outs.

Putting the slider in (or glass for that matter), fit the new rubber, wind a strong cord in the groove (~1 & 1/2 times) that will sit over the edge in the body. Then have a helper push the whole lot into the opening from the outside. On the inside slowly pull the cord out, it should lift the rubber egde up and over the edge it sits on. It may need a bit of coaxing initially.
