...just curious as to how difficult it is to convert a van (71-74) to a pop top or is it even possible/worth the time and effort?

Not too bad. I converted a rusty 74 high roof into a pop top years ago. I had to replace most of the roof section due to rust, just made sure the hole was the correct size for the pop top. From memory the middle roof brace gets moved further back to accommodate the pop top

Or you could just hack it out uneven, too big for the roof and no reinforcing so it rusts.
