My car was sweet to 147mph with just i set, perhaps the wheels are not pointing straight ahead?
7 to 9 degrees of caster should be more than you would ever need.

Sounds like maybe the rear is walking the car around , which is a very common problem !

Measure you caster first to make sure it is not bogus with so much rake.
This needs to be done in relation to the ground.
The top of your tunnel is a good reference to use when doing the cut.

You really need to make sure that your rear wheels are pointing the right way.
Early cars with late trans always struggle to get any toe in,
so you may have to shim the front trans mount.
I like a little toe in when the axles are dead level...but it must be centred to the front wheels.

so....
Get it on a machine to make sure the rear is in the same plain as the front.

Another problem with so much lowering, is the tie rods get into a position that has a lot of bump steer.

You can do all sorts of things to improve the situation,
like moving the tie rod ends, or making up a single tie rod and connecting track rod deal.
...but if you raise the front back to stock, and then do a small pie cut, you can get:
good caster(dont go too far),
car WILL be lower,
and with stock trailing arm angle,(in relation to the beam)
your bump steer will be reduced.
