Im pretty sure wolfburg west can supply all of that, except for the Mohair headliner.

go original with colour-coded sportier seats from an older sports car, so that it looks stock to a non-expert

I am personally a big fan of a red interior. I think it suit's nearly any exterior colour.

The easiest option is the red stock interior. As DD said, it suits nearly anything.

I'd possibly try something a little more custom on that particular car though, like blue 'leatherette' with a white sports stripes to match the exterior, on period aftermarket lowbacks, reupholstered to provide comfortable back support. I'd prefer squareweave, but there is no white squareweave option. Rear seat trimmed to match the fronts. Probably black carpet and mohair headliner like N said. 😎:thumb
