Hi, welcome to Oz Jonathan
I can make a few suggestions and maybe others can add alternatives for you.
Heading inland is the way most people from Victoria go if wanting to cover distance in the quickest time when going to Queensland.
The Western Plains Zoo in Dubbo is a good stop to make in NSW, you get to see lots of animals and stretch your legs. You can hire a bike to ride around the zoo. Well worth a visit.

Coonabarabran in NSW also worth a look. Night tour of Siding Springs Oberservatory great to visit. We went on a night tour and looked through the telescope. May need to check on this.
